For awhile I have pondered creating a space in the sprawling world of the interwebs dedicated to the dark arts of zymurgy (Ok, so it's not very dark, but it's not very well understood by many people). For more than six years I've studied, experimented, and experienced a great deal with fermentation.
Ethanol is such an interesting substance. According to Sangamon's Principle, the best drugs are the ones with the fewest number of atoms. Ethanol is the third best drug, after oxygen and nitrous oxide, with its nine atoms total. We drink it, we wear it, sometimes we put it in our vehicles, we use it as social lubrication, and it takes the edge off the day to day grind that our lives can sometimes have. For those of us that dabble with fermentation it's so much more; it's culture, an obsession, and somewhat of a lifestyle. For me, understanding fermentation helps me to tell a story. We love stories. Stories give us experience beyond our normal existence. Using ethanol's solvent character helps us distill the world around us into potable proofs.
It's also a bit like magic: strange, euphoric, explosive, and sedative.
